Cotton Fields to Skycrapers at the Levine Museum.jpgYou can't put the American South in a box. It's a dynamic place, with a creative energy and a hunger for freedom that has manifested in many different ways over the years. To get a sense of where it all began and the trajectory the South has taken, drop by the Levine Museum of the New South in Charlotte, North Carolina. This unique history museum focuses on life in the North Carolina Piedmont after the Civil War, touching on the many people and events that shaped the region over the past century and a half. The museum's main exhibit, Cotton Fields to Skyscrapers: Charlotte and the Carolina Piedmont in the New South, covers 8,000 square feet and features Charlotte and the 13 counties that surround it as a case study to illustrate the profound changes since the war. As such, there are numerous interactive exhibits designed to help visitors experience what life was like, from a one-room tenant farmer's house (with scarcely enough space for a bed) to a pile of seed cotton (you can run your hand through it) to a churning cotton mill that turned it into textiles that were shipped across the country. But perhaps its most interesting exhibit is related to one of the South's most beloved retailers. A reproduction of the first Belk department store from 1888 (pictured) is located on a recreated Main Street, and features apparel and accessories for the natty 19th century southern gentleman. Try on a hat and see how you'd look back in the old days. Starwood has hotels throughout the city, including the nearby Westin Charlotte.

Norwalk, Connecticut's Knipschildt Chocolatier is one of the most prominent young confection companies in the country, an independent empire run by Fritz Knipschildt, a handsome Danish chef who combines his background in fine dining with a boundary-breaking flair for sweets. Knipschildt's individual chocolate pieces are named after women, such as the Stacy (white chocolate with cardamom ganache), Carrie (crunchy mocha nougatine), Hannah (burnt caramel with Hawaiian sea salt), Donna (dark chocolate and currant with edible gold leaf), Rosa (rose truffle with rose petal), and Kelly (strawberry lemon thyme). They're all a treat for the eyes as well, miniature art pieces bedecked in edible finery. At Chocopologie Cafe, his adjacent eatery, you can take the chocolate theme even further into unexplored territories, such as escargot with beurre chocolat and garlic bread, or just enjoy savory offerings such as salads, sandwiches, and breakfast plates without chocolate. It's the perfect place to go wild, or stick with more familiar fare.

Knipschildt is an easy and short drive from your stay at Four Points by Sheraton Norwalk, so there's no excuse not to dive into this chocolate wonderland and pick out some gifts for your loved ones. Knipschildt is also easily accessible from New York City, about an hour train-ride, with the shop and cafe located mere blocks from the train station. What are your favorite chocolatiers in the world? Please tell us about them in the comments below.
